Bananas provide a wonderful aroma and flavor to these moist muffins.

Time to prepare: 10 minutes
Difficulty: Easy

Ingredients

1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 cup soft or melted butter or margarine
2 eggs
1/2 cup milk
1 small banana, diced
1/2 cup chopped pecans or walnuts.

Directions

In mixing bowl, stir together flour, sugar, baking powder, salt and nutmeg. Stir in butter.

Beat together eggs and milk. Blend into mixture just enough to misten flour. Do not overmix.

Fold in banana and chopped nuts. Spoon batter into 12 greased medium-sized muffin tins.

Bake at 400 degrees F for 20 minutes or until muffins are lightly browned.

Other Notes:

Be sure not to overmix muffin batter. Overmixed batter produces muffins with "tunnels" and a tough texture.
